I not sure where your coming from there guy but I spent 3 years
a professional welder....

Aluminium is a pig ...Stainless is a dream....

Aluminium requires a high frequency "buzz box" AC TIG or MIG
welder with pure argon Gas (although you can weld using Stick if
you preheat) stainless is easier and cleaner to weld with a
straight or reverse polarity (my preference) DC using Stick, MIG
or TIG with less exotic gas mixtures...

I have worked with welders that can weld anything this side of
cardboard and I would hazard a guess that All of them would
rather weld stainless...

Now Machining is a different story MUCH easier with aluminium
than Stainless (stainless work hardens and is just brutal on
cutting tools)
