Well that depends what you had in mind:
74x14's are Schmitt-trigger-inverters (6 inverters in one chip), while
74x240's have some extra things: 8 inverters in one chip, with the options
to make the outputs high-impedance (this is called tristate: output can be
high, low and undefined (not related to the input)). Normally 74x14's are
used in microcores (at least, reading through Beam-webpages you will get
this impression), while 74x240 are also used for other things like
suspended bicores (which are more difficult to make with the 14's).
Of course there are more differences between the chips, but whether they
are important depends on what you want to use them for ..... tell me.
